Chlorophyll is the generally accepted name for the green pigments in any organism capable of photosynthesis. It is the most widely distributed natural plant pigment. The chlorophyll (green) colour is extracted from Spinach with the magnesium in the natural chlorophyll, replaced by copper to produce richness and colour fastness. Saponification yields the water soluble copper chlorophyllins.
